Kantola popularly known as Spiny Gourd/Teasel Gourd in English It is called Kantola in Hindi and Katwal in Gujarati.

It is easily cultivated on unfertile soil and its vine has only 3 to 4 months life span. It looks similar to bitter melon look wise but has only 2-3 cm diameter. Spiny gourd pods are dark green in color and they change color as they get ripe from light green to yellow.

Spiny gourds of dark green color are edible. It is prepared by peeling its outer skin

It's name spiny gourd or kantola comes from spines all over its body.

Nutritional Facts
Kantola are low in calories. They contain only 17 calories per 100g. They are full of different nutrients like dietary fiber, minerals, vitamins and anti-oxidants.

It has health benefits like Bitter Melon. It is helpful in lowering the blood sugar, works as anti-aging agent, improves eye-sight, reduces chances of cancer, removes kidney-stones, is a home-remedy to cure piles, reduces excess sweating, treats coughing and improves digestion.

Kantola Masala
Ingredients

  • Kantola / Spiny Gourd 2 cups
  • Onions 2
  • Tomato 2
  • Green Chillies 4
  • Turmeric Powder a pinch
  • Red Chilly Powder 1 tsp
  • Curry Leaves few sprigs
  • Cilantro few sprigs
  • Oil 2 tbsp
  • Salt to taste

Masala

  • Corainder Seeds 1 tbsp
  • Poppy Seeds 1 tbsp
  • Cumin Seeds 1/2 tbsp
  • Cloves 4
  • Cinnamon 2 inch stick
  • Cardamom 1
  • Ginger 1 inch piece
  • Garlic Cloves 4

Method

  1. Wash kantola under water thoroughly.
  2. Remove ends and chop kantola into 1/2 inch thick circles.
  3. Remove stems, wash and finely chop green chiles.
  4. Peel and finely chop onion.
  5. Wash and finely chop tomatoes.
  6. Peel and roughly chop ginger.
  7. Peel and lightly mash garlic.
  8. Wash and finely chop cilantro.
  9. Grind all the masala ingredients into fine paste adding enough water.
  10. Heat oil in a pan, add chopped kantola circles.
  11. Stir fry until kantola turns light brown and remove them from the pan.
  12. Add curry leaves, onion and green chile to the same pan.
  13. Fry until onion changes color, add ground masala paste, turmeric powder, red chile powder and salt.
  14. Stir in chopped tomatoes and fried kantola.
  15. Sprinkle little bit of water if required to avoid burning.
  16. Once tomatoes turn soft, remove from heat.
  17. Garnish with cilantro and serve with steamed rice or roti.
