Tindora, botanical name Coccinia grandis, also known as tendli (in India), ivy gourd, baby watermelon, little gourd, gentleman's toes, tonde Kai, tindora, rashmato,or (misleadingly) gherkin, is a tropical climbing vine that is both cultivated and found growing wild. Its fruit and shoots both are edible.

It can grow upto 4 inches per day, and gradually covers other vegetations by becoming dense shading other plants from sunlight and nutrients, effectively killing vegetation underneath.

They are best when cooked, and are often compared to bitter melon. The fruit is commonly eaten in Indian cuisine. People of Indonesia and other Southeast Asian countries also consume the fruit and leaves. In Thai cuisine, it is one of the ingredients of the kaeng khae curry.

Tindora Fry
Ingredients

  • Tindora 1 lb
  • 1 tsp Red Chilli powder
  • 2 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tbsp Lemon juice
  • 2 tsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • 1 tbsp chopped Garlic
  • pinch of Hing
  • 5 to 6 Curry Leaves
  • 2 slit Green Chillies
  • 1 tsp Garam Masala
  • 2 tsp Coconut powder
  • 1/4 cup chopped Coriander Leaves
  • 1/4 tsp Turmeric powder

Method

  1. Wash tindora well, remove its edges and cut it lengthwise.
  2. Add red chilli powder, cumin powder, coriander powder, lemon juice over cut tindora, mix well and leave it for 15 mts.
  3. Heat oil add mustard seeds, cumin seeds, hing, garlic and saute till garlic gets nice golden color.
  4. Add green chillies, curry leaves, tindora, mix, sprinkle some salt, cover and cook till it gets cooked.
  5. Add garama masala, coconut powder, coriander leaves.Serve hot with roti, rice or phulka!
