Papri beans are long, flat beans with smooth green skin. They are eaten when young and tender. They become fibrous and inedible when old. They are a big part of cuisine in the Gujarati region in west India. It is known by several names both in India and abroad. It is known as Valore bean, Val bean or warlor papdi, and Indian Bean in the US.
It is either sauted or baked and served as accompaniment to meat or fish dishes. It is used extensively in Indian cuisine by either blanching it and cutting into pieces and then adding to salads and soups.
